How to handle split payments?

I am looking to launch a site where my site retains a percentage of the transaction of a customer and a service provider. What is the best way to handle the flow of funds? Should I collect the full payment and then pay the provider? Can Stripe or any other payment gateway split the payments based on a percentage or any other calculation?

Are you trying to launch freelancer site? You may try Jungleworks (Husky) or sitemile (to buy and install the WP freelancer theme).
