I have been struggling with keeping health and sticking to a workout/diet regiment myself while keeping to a busy schedule. What have you biggest challenges been in this regard ?

Do 5-minutes morning exercises, walk as much as possible, try to choose only healthy food (it's possible even in strong time restriction). Also, there are companies providing full-day meals.
If you eat healthy and do regular exercise then you can improve your health. The best exercise is just walk daily for 30 minutes. This can keep you healthy.
It is very important to be motivated otherwise you may not succeed in any task even can't keep yourself healthy.Staying fit is a time taking process which basic requirement is motivation.
